A super-talented lady called Fabiola Tombo – a French pastry chef who has adopted Lisdoonvarna as her home. Fabiola has brought her love for authentic French pastries and other home-made delicacies to North Clare and has added local ingredients where possible. Fabiola trained in Burgundy France and has extensive experience from working in Michelin-star restaurants such as Lameloise in Burgundy and Le Benaton in Beaumes. You won’t doubt this once you’ve indulged in one of Fabiola’s divine creations. Fabiola has demonstrated how advanced pastry skills and creativity can be employed to create a true ‘place on a plate’ experience. e.g. Burren Black Stout Bread that accompanies many-a-dish in The Roadside Tavern.
